The Cheat Sheet Donuts

 


This was one of the first closed door/ fade to black romance books I'd read. It's a great friends to lovers, forced proximity, and sports romance. That said, months later I came up with a donut recipe to accompany you as you read Bree and Nathan's story. As donuts play a huge part in their story. 


Bree & Nathan's Donuts (Gluten Free/Paleo)

2/3 cup of Coconut Sugar

1/2 cup of Coconut Flour

1/2 cup of Tapioca Starch

1 teaspoon of baking powder

3/4 teaspoon of salt

1/4 cup of butter, melted and cooled

2 large eggs

3/4 cup of dairy free or traditional milk

1 teaspoon of pure vanilla extract

Instructions: 

  1. Preheat oven to 350 degrees Fahrenheit. Grease two 6-cavity doughnut pans with nonstick cooking spray or butter
  2. Whisk the coconut sugar, flour, starch, baking powder and salt together in a medium mixing bowl 
  3. Add the melted butter, milk, eggs, vanilla, and mix till smooth. The batter should be thick. 
  4. Spoon the batter into the prepared pans, filling the cavities around three-quarters full. If you have a piping bag and large pastry tip lying around, I suggest using those instead for even batter. 
  5. Lightly tap the pans on the counter to settle the batter before placing them in the oven
  6. Bake the doughnuts until they are golden and spring back to the touch, about 15 minutes.
  7. Allow them to cool for around 5 minutes.
  8. Decorate with a glaze or by themselves.
