The Journey Begins...

Hello Everyone, I'm a little late on this week's post, but I hope everyone who looks on every week enjoyed the Lemon Cookie recipe. If you have read my first post titled "Welcome", you would know a little bit of my story. So today I'm going to tell just a little bit more about how I started this journey. When I was first diagnosed with pre-diabetes, I was literally in shock, and at first, I didn't think I had heard the doctor right. I just never thought I would ever hear those words, Once the initial shock was over and the doctor explained, that I just needed to change my diet and exercise more, it helped me to realize everything would be okay... it was really hard at first, but I had made one paleo recipe before, it was a wonderful brownie recipe by Dr.Axe (if you have not heard of him, he is a holistic doctor and a keto/paleo expert.) Back to the story... cutting out bread and sweets was SUPER hard, but doing research helped me discover that eating bread, pasta, cake, cookies, etc. anything with Flour or refined sugar will run up blood sugar faster than eating a candy bar or drinking coke or sweet tea. After reading the study, I determined in my mind that I was going to overcome the label of diabetes and do the best I could to maintain my health. For me, it's a mindset of determination and willpower, either I could have the mindset of relying on a blood sugar medication and giving in to Diabetes or having the mindset to overcome and be healthy and happy. I chose to be an OVERCOMER !!! In the process, I have become a happier and stronger person, and now I want to help other people be overcomers as well. Which is one reason I started this blog. The other reason is to help people who don't know about paleo and that there's more than just a medication to manage it... I hope that I can help others know that they're not alone on their journey with diabetes. This is my story and I'm still growing strong in paleo. I want to thank all who have read in the past few weeks, it means a lot.
